1 (2 lb) pork loin
Salt and pepper, to taste
2 tbsp olive oil
4 garlic cloves, minced
1/2 cup balsamic vinegar
1/4 cup honey
1 tbsp soy sauce
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
Fresh parsley, chopped (for garnish)

Preheat Oven: Set oven to 375°F (190°C).
Season the Pork: Generously season pork loin with salt and pepper.
Sear the Pork: In a large oven-safe skillet, heat olive oil over medium-high heat. Add the pork loin and sear on all sides until golden brown, about 3-4 minutes per side. Remove from skillet and set aside.
Prepare the Glaze: In the same skillet, add minced garlic and cook for 1 minute until fragrant. Stir in balsamic vinegar, honey, soy sauce, rosemary, and thyme. Let it simmer for 2-3 minutes until slightly thickened.
Roast: Return the pork to the skillet, coating it with the glaze. Transfer the skillet to the oven and roast for 25-30 minutes, basting with the glaze halfway through, until the pork reaches an internal temperature of 145°F (63°C).
Rest and Serve: Let the pork rest for 5-10 minutes before slicing. Garnish with fresh parsley and spoon additional glaze over each slice.
