Creamy Parmesan Italian Sausage Soup
Ingredients:
1 lb Italian sausage (mild or spicy, your choice)
1 medium onion, diced
2 cloves garlic, minced
3 cups chicken broth
2 cups heavy cream
1 cup grated Parmesan cheese
2 cups kale or spinach, chopped
2 medium carrots, sliced
1 medium zucchini, diced
1 tsp Italian seasoning
Salt and pepper, to taste
Olive oil, for cooking
Instructions:
Cook the Sausage:
In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon as it cooks (about 5-7 minutes). Drain excess fat if necessary.
Sauté Vegetables:
Add the diced onion and sliced carrots to the pot with the sausage. Sauté for about 5 minutes, or until the onion is translucent. Add the minced garlic and sauté for another minute until fragrant.
Add Broth and Zucchini:
Pour in the chicken broth and add the diced zucchini. Bring to a simmer and let it cook for about 10-15 minutes until the vegetables are tender.
Stir in Cream and Cheese:
Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Continue to stir until the cheese is melted and the soup is creamy.
Add Greens:
Stir in the chopped kale or spinach and Italian seasoning. Cook for an additional 3-5 minutes until the greens are wilted and tender.
Season:
Taste and season with salt and pepper as needed.
Serve:
Ladle the soup into bowls and enjoy warm!
