Ingredients:

  • 2 (14.75 oz) cans of pink salmon, drained and flaked
  • 1/2 cup breadcrumbs (preferably panko for extra crunch)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Salmon Mixture:
  • In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, eggs, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper. Mix until all ingredients are well incorporated.
  1. Form the Patties:
  • Using your hands, shape the salmon mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should get around 8-10 patties.
  1. Heat the Oil:
  • In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep). Heat the oil over medium heat until it shimmers.
  1. Fry the Patties:
  • Carefully place the patties in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches.
  1. Drain and Serve:
  • Once cooked, transfer the patties to a plate lined with paper towels to drain excess oil. Garnish with fresh parsley if desired.
