INGREDIENTS:
4 medium sweet potatoes
1 cup cherry tomatoes, halved
2 tablespoons olive oil
Salt and pepper, to taste
1/2 cup pesto (store-bought or homemade)
8 ounces burrata cheese
Fresh basil leaves, for garnish
INSTRUCTIONS:
STEP 1: BAKE THE SWEET POTATOES
Preheat Oven: Preheat your oven to 400°F (200°C).
Bake: Pierce the sweet potatoes with a fork, place them on a baking sheet, and bake for 45-50 minutes or until tender.
STEP 2: ROAST THE TOMATOES
Roast: While the sweet potatoes are baking, toss the cherry tomatoes with olive oil, salt, and pepper. Roast in the oven for 15-20 minutes until slightly blistered and juicy.
STEP 3: ASSEMBLE THE STUFFED SWEET POTATOES
Slice Potatoes: Once baked, slice the sweet potatoes open lengthwise.
Fill with Pesto: Spread a spoonful of pesto inside each sweet potato.
Add Burrata: Tear the burrata and stuff it inside the sweet potatoes, allowing it to melt slightly.
Top with Tomatoes: Add the roasted cherry tomatoes on top.
STEP 4: GARNISH AND SERVE
Garnish: Finish with fresh basil leaves and serve immediately.
