Decadent Peanut Butter Cup Cookie Bars with Chocolate Layers

Ingredients:

1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1 cup mini peanut butter cups, chopped
Directions:

Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until combined.
Stir in the oats and chocolate chips, then press half of the dough into the prepared baking dish.
Melt the peanut butter in the microwave for about 30 seconds and spread it evenly over the dough layer.
Sprinkle the chopped mini peanut butter cups over the peanut butter layer, then crumble the remaining dough on top.
Bake for 25-30 minutes, or until the top is golden brown. Let cool completely before slicing into bars.
