Purslane is even tastier than meat! I learned this great recipe from my neighbors from Turkey.
Ingredients:
A bunch of fresh purslane, washed and chopped
2 tomatoes, finely diced
1 cucumber, peeled and chopped
1 small red onion, thinly sliced
1/2 cup crumbled feta cheese
Juice of 1 lemon
1/4 cup olive oil
Salt and freshly ground black pepper
A handful of chopped fresh mint or parsley
Instructions:
Combine Veggies: In a large bowl, mix the tomatoes, cucumber, red onion, and purslane.
Prepare Dressing: Whisk together the lemon juice, olive oil, salt, and pepper in a small bowl.
Toss Salad: Pour the dressing over the salad and toss well to coat everything evenly.
Add Toppings: Finish with crumbled feta cheese and fresh herbs.
