Ingredients:


2 lbs (900g) boneless, skinless chicken thighs or breasts
1 cup pineapple chunks (fresh or canned, drained)
1/2 cup soy sauce
1/4 cup honey
1/4 cup brown sugar
1/4 cup rice vinegar
3 cloves garlic, minced
1 tablespoon grated fresh ginger (or 1 teaspoon ground ginger)
1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
1 tablespoon cornstarch
2 tablespoons water
1/4 cup chopped green onions (for garnish)
Sesame seeds (for garnish, optional)


Instructions:


Prepare the Chicken:


Place the chicken thighs or breasts in the bottom of the crockpot.


Make the Sauce:


In a medium bowl, whisk together the pineapple chunks, soy sauce, honey, brown sugar, rice vinegar, minced garlic, grated ginger, and crushed red pepper flakes (if using).


Combine and Cook:


Pour the sauce mixture over the chicken in the crockpot. Ensure the chicken is well coated with the sauce.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.


Thicken the Sauce (Optional):


About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry.
Stir the slurry into the crockpot and cover. Cook on high for an additional 30 minutes, or until the sauce has thickened.


Serve:


Once the chicken is cooked and the sauce has thickened, shred the chicken directly in the crockpot using two forks, or remove it and shred it on a cutting board before returning it to the pot.
Serve over rice or noodles, garnished with chopped green onions and sesame seeds if desired.
