Mango Panna Cotta

Ingredients
For the Panna Cotta:
1 ¼ cups fresh cream (e.g., Amul cream)
¾ cup full-fat milk
½ cup sugar (slightly less than ½ cup)
1 tsp vanilla essence
¼ tsp cardamom powder
2 tsp agar agar or 1 ¼ tsp gelatin
3 to 4 tbsp warm water
For the Mango Coulis:
1 ½ cups mango puree
2 tbsp sugar (adjust according to sweetness of mangoes)
1 tsp lemon juice
Pinch of cardamom powder
Instructions
1. Prepare the Mango Coulis
In a small saucepan, combine the mango puree, sugar, and cardamom powder.
Simmer over low heat for about 2 minutes, stirring occasionally.
Remove from heat and add the lemon juice. Mix well and allow to cool.
2. Prepare the Panna Cotta
Lightly grease the insides of serving bowls with oil or cooking spray.
Divide the cooled mango coulis among the prepared dessert bowls. Cover with cling wrap and refrigerate for 1 to 2 hours.
3. Soak the Agar Agar
In a small bowl, soak the agar agar powder in warm water for a few minutes.
4. Cook the Cream Mixture
In a stainless steel vessel, combine the whole milk and fresh cream. Heat on low flame until it reaches a boil.
Add the sugar and simmer until dissolved, stirring occasionally. Turn off the heat.
5. Melt the Agar Agar
In a small saucepan, place the soaked agar agar mixture over low heat. Stir continuously until it melts and becomes clear with no lumps. Remove from heat.
6. Combine Mixtures
Check the milk mixture to ensure the sugar is completely dissolved.
Place the milk mixture over an ice bath and whisk until lukewarm.
Add the cooled agar agar mixture, vanilla essence, and cardamom powder to the milk mixture. Mix well until fully blended.
7. Assemble and Chill
Remove the cling wrap from the bowls with mango coulis.
Carefully pour the milk-agar agar mixture over the coulis in each bowl. Cover with cling wrap again and refrigerate for at least 4 to 6 hours or overnight.
8. Serve
At serving time, gently remove the cling wrap and garnish each panna cotta with a few mango cubes. Enjoy your delicious Mango Panna Cotta!
Notes
This dessert can be made a day in advance for easier entertaining.
