Sugar Plum Shortbread Cookies
Ingredients:
2 cups all-purpose flour
1/4 teaspoon salt
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup dried fruit (such as raisins, currants, or dried plums), finely chopped
Coarse sugar for sprinkling
Instructions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a bowl, whisk together flour and salt.

In a separate bowl, cream together butter and powdered sugar until light and fluffy. Add vanilla extract and mix well.

Gradually add the dry ingredients to the wet mixture and fold in the chopped dried fruit. Mix until combined.

Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball gently with a fork or your hands.

Sprinkle with coarse sugar and bake for 10-12 minutes, or until the edges are lightly golden.
7.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
