This Cheesy Enchilada Chili combines the rich, bold flavors of enchiladas with the comforting heartiness of chili. It’s thick, cheesy, and packed with protein, making it a perfect one-pot meal for busy weeknights or cozy weekends!
Ingredients:
✅ 1 lb ground beef (or ground turkey)
✅ 1 small onion, diced
✅ 3 cloves garlic, minced
✅ 1 can (15 oz) black beans, drained & rinsed
✅ 1 can (15 oz) kidney beans, drained & rinsed
✅ 1 can (15 oz) corn, drained
✅ 1 can (15 oz) diced tomatoes
✅ 1 can (10 oz) red enchilada sauce
✅ 1 can (4 oz) diced green chilies
✅ 2 cups beef broth (or chicken broth)
✅ 2 teaspoons chili powder
✅ 1 teaspoon cumin
✅ 1 teaspoon smoked paprika
✅ ½ teaspoon salt & black pepper
✅ 1½ cups shredded cheddar cheese (or Mexican blend)
✅ ½ cup sour cream (optional, for creaminess)
Instructions:
1️⃣ Brown the meat – In a large pot, cook the ground beef over medium heat until browned. Drain excess grease if needed.
2️⃣ Sauté the aromatics – Add the onion and garlic and cook until softened.
3️⃣ Add the beans, corn, tomatoes, enchilada sauce, chilies, and broth. Stir well.
4️⃣ Season – Mix in the chili powder, cumin, smoked paprika, salt, and pepper. Bring to a boil.
5️⃣ Simmer – Reduce heat and let the chili simmer for 20-25 minutes, stirring occasionally.
6️⃣ Add the cheese – Stir in shredded cheese until melted and creamy. If using, mix in sour cream for extra richness.
