Ingredients:
2 ½ tbsp unflavored gelatin (about 3 packets)
½ cup cold water
1 ½ cups granulated sugar
1 cup light corn syrup
¼ tsp salt
½ cup water (for boiling)
1 ½ tsp cotton candy extract
Few drops of pink and blue food coloring
½ cup powdered sugar
¼ cup cornstarch
Sparkling sugar for dusting
Directions:
Bloom the Gelatin:
In a stand mixer bowl, sprinkle the gelatin over ½ cup of cold water.
Let it sit for about 10 minutes to bloom.
Make the Syrup:
In a saucepan, combine granulated sugar, corn syrup, salt, and ½ cup of water.
Heat over medium, stirring until the sugar dissolves.
Once dissolved, stop stirring and let it boil until it reaches 240°F (soft ball stage) on a candy thermometer.
Whip It Up:
Carefully pour the hot syrup into the bloomed gelatin while mixing on low speed.
Increase speed to high and beat for 8-10 minutes until the mixture is fluffy and tripled in volume.
Add Flavor & Color:
Mix in the cotton candy extract.
Divide the mixture into two bowls.
Add pink food coloring to one and blue to the other, then gently swirl them together.
Set & Cut:
Grease a baking dish and dust it with a mix of powdered sugar and cornstarch.
Pour in the marshmallow mixture, smooth it out, and let it sit for at least 6 hours or overnight.
Cut & Coat:
Cut into bite-sized squares.
Toss them in sparkling sugar for a magical finishing touch!
