Cranberry Pistachio Energy Bites
Ingredients:
- 1 cup rolled oats
 - 1/2 cup pistachios, chopped
 - 1/4 cup dried cranberries, chopped
 - 2 tablespoons chia seeds
 - 1/4 cup almond butter or peanut butter
 - 2 tablespoons honey or maple syrup
 - 1/2 teaspoon vanilla extract
 - Pinch of salt
 
Directions:
- In a large mixing bowl, combine the oats, chopped pistachios, dried cranberries, and chia seeds.
 - In a separate bowl, mix together the almond butter (or peanut butter), honey (or maple syrup), vanilla extract, and salt until smooth.
 - Pour the wet mixture over the dry ingredients and stir until everything is fully combined.
 - Roll the mixture into bite-sized balls, about 1 inch in diameter.
 - Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
 - Store in an airtight container in the fridge for up to one week.
