This vibrant no-bake pie combines the natural sweetness of blueberries with the silky texture of chia pudding, all nestled on a crunchy graham cracker crust. A wholesome yet indulgent dessert that’s perfect for any occasion!
Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
5 tbsp melted coconut oil or butter
2 tbsp maple syrup
For the Blueberry Chia Filling:
2 cups fresh or frozen blueberries
1 ½ cups coconut milk (full-fat)
¼ cup maple syrup or honey
1 tsp vanilla extract
½ tsp lemon zest
⅓ cup chia seeds
For Garnish:
Fresh blueberries & blackberries
Edible flowers (optional)
Extra lemon zest
Instructions
- Prepare the Crust
In a bowl, mix graham cracker crumbs, melted coconut oil, and maple syrup until combined.
Press firmly into the base of a 9-inch springform pan. Refrigerate while preparing the filling.
- Make the Blueberry Chia Filling
Blend blueberries, coconut milk, maple syrup, vanilla extract, and lemon zest until smooth.
Pour the mixture into a bowl and stir in chia seeds. Let sit for 10 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 2 hours (or overnight) until thickened.
- Assemble & Chill
Once the chia filling is set, pour it over the chilled crust and smooth the top.
Refrigerate for at least 4 hours or until firm
- Garnish & Serve
Top with fresh berries, edible flowers, and lemon zest.
