Delicious Homemade Meatloaf with Creamy Mushroom Gravy 🍽️

A classic comfort dish — juicy, flavorful meatloaf paired with rich, velvety mushroom gravy. Perfect for cozy dinners or family gatherings!

Ingredients:

For the Meatloaf:

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)

For the Mushroom Gravy:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1/4 cup heavy cream or milk
  • Salt and pepper to taste

Instructions:

  1. Prepare the Meatloaf Mixture:
Preheat oven to 375°F (190°C). In a large bowl, combine breadcrumbs and milk; let soak for 2 minutes. Add ground beef, ground pork, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined — do not overmix.
  2. Shape and Bake:
Form the mixture into a loaf shape and place it in a greased loaf pan or on a lined baking sheet. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
  3. Make the Mushroom Gravy:
In a skillet, melt butter with olive oil over medium heat. Add mushrooms and sauté until golden brown (5–7 minutes). Sprinkle in flour and stir for 1 minute. Gradually whisk in beef broth, stirring until smooth and thickened. Add cream, salt, and pepper to taste. Simmer for 3–5 minutes until creamy.
  4. Serve:
Slice the meatloaf and spoon the warm mushroom gravy generously over the top. Serve with mashed potatoes or roasted veggies for a perfect meal!

Tips:

  • Mix the meats gently for a tender texture.
  • For a tangy twist, brush the top of the loaf with extra ketchup during baking.
  • Add a splash of soy sauce or balsamic vinegar to the gravy for deeper flavor.
