Instructions

1. Prepare the Spinach

If using fresh spinach, sauté until wilted, then squeeze out all liquid.
If using frozen spinach, thaw completely and squeeze very dry.
Moisture removal is important for crisp results.

2. Mix the Dough

In a large bowl combine the chopped spinach, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, melted butter, salt, and pepper.
Mix until the mixture holds together when pressed.
If it feels too loose, add more breadcrumbs 1 tablespoon at a time.

3. Shape

Roll the mixture into small balls, about 1 inch each.
Place them on a baking sheet lined with parchment paper.

4. Bake
