Ingredients:
For the Dough:
1 1/2 cups (190g) all-purpose flour
1/2 cup (60g) almond flour (or finely ground almonds)
1/2 cup (60g) shelled pistachios, finely ground
1/2 cup (120g) unsalted butter, softened
For the Filling:
1 cup (250g) ricotta cheese
3 tablespoons honey (plus more for drizzling)
1/2 teaspoon vanilla extract
For Garnish:
2 tablespoons pistachios, chopped
A light drizzle of honey
Directions:
Prepare the Dough:
In a mixing bowl, combine the all-purpose flour, almond flour, and finely ground pistachios. Add the softened butter and mix until the dough comes together. Cover and refrigerate for 30 minutes.
Make the Filling:
In another bowl, combine the ricotta cheese, honey, and vanilla extract. Stir until smooth and creamy. Cover and refrigerate until ready to use.
Form the Bites:
Preheat your oven to 350°F (175°C). Take the chilled dough and roll it into small balls (about 1 inch in diameter). Press the center of each ball gently with your thumb to create an indentation.
Bake the Bites:
Place the formed bites on a baking sheet lined with parchment paper. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool completely.
Fill with Ricotta:
Once the bites are cool, spoon the ricotta mixture into the center of each bite. Use a piping bag for a neater presentation if desired.
Garnish and Serve:
Sprinkle the chopped pistachios over the ricotta filling and drizzle with a little extra honey. Serve immediately or refrigerate until ready to enjoy.
