  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 4-6 cups vegetable or chicken broth
  • 1-2 tbsp olive oil
  • 1 tsp thyme

  • Optional: 1-2 tsp apple cider vinegar or lemon juice for added tang

Instructions:

  1. Heat oil in a large pot over medium heat. Add the onion and garlic, cooking until softened (about 5 minutes).
