Cheesy Sausage Hashbrown Bake that’s perfect for breakfast or brunch!

Ingredients
1 lb breakfast sausage (pork or turkey)
1 (30 oz) bag frozen hash browns (shredded or diced)
1 cup shredded cheddar cheese (plus more for topping)
1 cup shredded mozzarella cheese
1/2 cup diced onion
1/2 cup diced bell pepper (optional)
4 large eggs
1 cup milk
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)

Instructions
Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray.

In a large skillet, cook the sausage over medium heat until browned and cooked through, breaking it into small pieces as it cooks. Drain excess fat if necessary.

In a large bowl, combine the hash browns, cooked sausage, onion, bell pepper (if using), cheddar cheese, and mozzarella cheese.

In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, black pepper, and paprika (if using).

Pour the egg mixture over the hash brown and sausage mixture. Stir until well combined.

Transfer the mixture to the prepared baking dish, spreading it evenly. Sprinkle additional cheese on top if desired.

Bake for 40-45 minutes, or until the top is golden brown and the edges are bubbly.
