Silky Italian Chocolate Pudding
Ingredients:
2 cups whole milk
1 cup heavy cream
6 oz dark chocolate, chopped
1/2 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 large egg yolks
1 teaspoon vanilla extract
Whipped cream (for garnish)
Chocolate shavings (for garnish)
Directions:
In a medium saucepan, combine the milk, heavy cream, and chopped dark chocolate. Heat over medium heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth.
In a separate bowl, whisk together the sugar, cornstarch, salt, and egg yolks until smooth and well combined.
Gradually pour the chocolate mixture into the egg mixture, whisking continuously to prevent the eggs from curdling.
Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble. This should take about 5-7 minutes.
Remove the saucepan from the heat and stir in the vanilla extract.
Pour the pudding into individual serving dishes and cover each with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Refrigerate for at least 4 hours, or until fully chilled and set.
Before serving, garnish with whipped cream and chocolate shavings.
