Ingredients:
For the Dough:
4 cups all-purpose flour
1/4 cup granulated sugar
1 packet (2 1/4 tsp) instant yeast
1 tsp salt
1/2 cup warm milk (about 110°F or 43°C)
1/2 cup warm water (about 110°F or 43°C)
1/4 cup unsalted butter, melted
1 large egg
For the Coconut Filling:
1 cup sweetened shredded coconut
1/2 cup sweetened condensed milk
1/4 cup unsweetened coconut milk (or regular milk)
1 tsp vanilla extract
A pinch of salt
For the Topping (optional):
Extra shredded coconut for sprinkling
Powdered sugar for dusting
Instructions:
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, sugar, yeast, and salt.
In a separate bowl, whisk together the warm milk, warm water, melted butter, and egg until well combined.
Gradually pour the wet ingredients into the dry ingredients and mix until a soft dough forms.
Step 2: Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 3: Prepare the Coconut Filling
In a bowl, mix together the shredded coconut, sweetened condensed milk, coconut milk, vanilla extract, and a pinch of salt until well combined.
Step 4: Assemble the Buns
After the dough has risen, punch it down and divide it into 12 equal pieces.
Roll each piece into a ball and then flatten it into a disc (about 4 inches in diameter).
Place a generous tablespoon of the coconut filling in the center of each disc. Fold the edges over the filling and pinch to seal, forming a bun.
Place the buns seam-side down on a greased baking sheet, spacing them apart.
Step 5: Second Rise
Cover the buns with a damp cloth and let them rise for another 30-45 minutes, until they are puffy.
Step 6: Bake the Buns
Preheat your oven to 350°F (175°C).
Bake the buns for 15-20 minutes or until they are golden brown.
If desired, sprinkle extra shredded coconut on top before the last few minutes of baking for added texture.
Step 7: Cool and Serve
Let the buns cool on a wire rack for about 10 minutes before serving.
Dust with powdered sugar if desired, and enjoy your delicious coconut buns!
These coconut buns are perfect as a snack or dessert, bringing a taste of tropical delight to your table! Enjoy!
