Southern Fried Salmon Patties 🐟🍽️
Ingredients:
- 2 (14.75 oz) cans of pink salmon, drained and flaked
- 1/2 cup breadcrumbs (preferably panko for extra crunch)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper (any color)
- 2 large eggs
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
- Fresh parsley for garnish (optional)
Instructions:
- Prepare the Salmon Mixture:
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, eggs, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper. Mix until all ingredients are well incorporated.
- Form the Patties:
- Using your hands, shape the salmon mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should get around 8-10 patties.
- Heat the Oil:
- In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep). Heat the oil over medium heat until it shimmers.
- Fry the Patties:
- Carefully place the patties in the hot oil, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. You may need to do this in batches.
- Drain and Serve:
- Once cooked, transfer the patties to a plate lined with paper towels to drain excess oil. Garnish with fresh parsley if desired.
