Nun’s Puffs

Nun’s Puffs are a light, airy pastry with a rich, eggy flavor—kind of like a cross between a cream puff and a pancake. They come from a traditional French recipe (often called pets de nonne, humorously translated as “nun’s farts”).

Here’s a classic recipe you can try:

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup milk
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs

Instructions:

  1. Preheat oven to 375°F (190°C). Grease 12 muffin cups.

  1. In a saucepan, combine butter, milk, sugar, and salt over medium heat. Bring to a boil.

  1. Add flour all at once, stirring vigorously until the mixture pulls away from the sides of the pan and forms a ball (like choux pastry). Remove from heat and let cool 5 minutes.

  1. Beat in eggs one at a time, making sure each is fully incorporated before adding the next. The batter will become smooth and glossy.

  1. Spoon into muffin cups, filling each about halfway.
  2. Bake for 30–35 minutes, or until golden brown and puffed.

  1. Serve warm—optionally dusted with powdered sugar or drizzled with honey.
