Cheesy Taco Tortellini Skillet 🌮🧀
Cheesy, creamy, and bursting with bold flavor! This one-pan dinner combines tender cheese tortellini, seasoned ground beef, and a rich taco-style sauce — the perfect fusion of Italian comfort and Tex-Mex flair. 😍
Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade mix)
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
- 1 cup tomato sauce
- 1/2 cup water or beef broth
- 1 package (9 oz) refrigerated cheese tortellini
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (or Mexican blend)
- Salt and pepper to taste
- Optional toppings: sliced green onions, chopped cilantro, jalapeño slices
Instructions:
- Cook the Beef:
Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat. - Add Flavor:
Add diced onion and garlic, cooking for 2–3 minutes until softened. Stir in taco seasoning and mix well. - Build the Sauce:
Pour in diced tomatoes, tomato sauce, and water or broth. Stir to combine, then bring to a simmer. - Add the Tortellini:
Stir in the cheese tortellini. Cover and simmer on low heat for 8–10 minutes, until the pasta is tender and the sauce thickens. - Make It Cheesy:
Stir in sour cream until creamy, then sprinkle cheese over the top. Cover again for 2 minutes until the cheese melts. - Serve:
Garnish with green onions, cilantro, or jalapeño slices if desired. Serve hot and enjoy!
Tips:
- For extra heat, add chili flakes or hot sauce to the sauce.
- Substitute black beans or corn for a fun twist.
- Use rotisserie chicken instead of beef for a lighter version.
- Leftovers reheat perfectly — great for meal prep!
