Chocolate Strawberry Kiwi Tart

Ingredients:

For the Tart Crust:


1 1/2 cups graham cracker crumbs (or chocolate cookie crumbs)
1/4 cup unsalted butter, melted
2 tablespoons granulated sugar
For the Chocolate Filling:
1 cup heavy cream
10 oz dark chocolate, finely chopped
2 tablespoons unsalted butter
1/4 teaspoon vanilla extract
Pinch of salt


For the Topping:


1 cup fresh strawberries, hulled and sliced
1 cup kiwi, peeled and cut into small chunks
2 tablespoons strawberry jam, warmed
Powdered sugar for dusting (optional)


Directions:

  1. Prepare the Tart Crust:
    Preheat the oven to 350°F (175°C).
    In a medium bowl, combine graham cracker crumbs (or chocolate cookie crumbs), melted butter, and sugar. Mix until well combined.
    Press the mixture evenly into the bottom and sides of a 9-inch tart pan. Use the back of a spoon or a flat-bottomed glass to press firmly.
    Bake the crust for 8-10 minutes until lightly golden. Set aside to cool completely.
  2. Make the Chocolate Filling:
    In a saucepan, heat the heavy cream over medium heat until it starts to simmer. Do not let it boil.
    Remove from heat and add the chopped dark chocolate and butter. Stir until the chocolate and butter have melted completely, and the mixture is smooth.
    Stir in vanilla extract and a pinch of salt. Let the mixture cool for a few minutes.
  3. Assemble the Tart:
    Pour the chocolate filling into the cooled tart crust. Use a spatula to smooth the top evenly.
    Place the tart in the refrigerator to set for about 1-2 hours until the chocolate is firm.
  4. Add the Toppings:
    Once the chocolate filling is set, arrange the sliced strawberries and kiwi on top of the tart in a decorative pattern.
    Lightly brush the warmed strawberry jam over the fruit to give it a shiny finish.
    Dust with powdered sugar if desired.
  5. Serve:
    Slice the tart and serve chilled. The combination of rich chocolate with the fresh fruit creates a delightful balance of flavors.
