Super Crunch Salad
Ingredients:
4 cups shredded green cabbage
2 cups shredded red cabbage
1 large carrot, grated
1 bell pepper, thinly sliced
1/2 cup sliced radishes
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup sliced green onions
1/4 cup sunflower seeds
1/4 cup sliced almonds
1/4 cup dried cranberries or raisins
Dressing:
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and pepper to taste
Directions:
In a large bowl, combine the shredded green cabbage, shredded red cabbage, grated carrot, sliced bell pepper, sliced radishes, chopped parsley, chopped cilantro, sliced green onions, sunflower seeds, sliced almonds, and dried cranberries or raisins.
In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
Pour the dressing over the salad and toss until everything is evenly coated.
Serve immediately, or refrigerate for up to 2 hours before serving to allow the flavors to meld together.
