Ingredients

  • 1 lb (450g) smoked or Italian sausage, sliced
  • 1.5 lbs (700g) potatoes, cut into small cubes
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
  • Optional: fresh parsley for garnish


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the vegetables: Add potatoes, peppers, and onion to a large baking tray.
  3. Season: Drizzle with olive oil, add garlic, oregano, thyme, rosemary, salt, and pepper. Toss to coat evenly.
  4. Add the sausage: Scatter sliced sausage over the vegetables.
  5. Bake: Roast for 40–45 minutes, flipping halfway, until potatoes are golden and sausage is caramelized.
  6. Finish: Sprinkle with fresh parsley before serving if desired.
