Ingredients
- 1 lb (450g) smoked or Italian sausage, sliced
- 1.5 lbs (700g) potatoes, cut into small cubes
- 2 bell peppers, sliced
- 1 large onion, sliced
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and black pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the vegetables: Add potatoes, peppers, and onion to a large baking tray.
- Season: Drizzle with olive oil, add garlic, oregano, thyme, rosemary, salt, and pepper. Toss to coat evenly.
- Add the sausage: Scatter sliced sausage over the vegetables.
- Bake: Roast for 40–45 minutes, flipping halfway, until potatoes are golden and sausage is caramelized.
- Finish: Sprinkle with fresh parsley before serving if desired.
