Crispy Garlic-Parmesan Spinach Balls
Golden, cheesy, herb-packed bites with a perfectly crisp exterior. These spinach balls are easy, delicious, and perfect as appetizers, sides, or meal-prep snacks. The combination of garlic, Parmesan, and herbs gives them a deep savory flavor while the breadcrumbs create a crunchy outside and tender, melt-in-the-middle bite.
Yield
20–24 balls
Temperature
375°F (190°C)
Time
20–25 minutes
Ingredients
Key Ingredients First
- 2 cups chopped spinach (fresh sautéed or thawed frozen spinach, well drained)
- 1 cup grated Parmesan cheese
- 1 cup seasoned breadcrumbs
Remaining Ingredients
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 tablespoon melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1 cup shredded mozzarella for extra cheesiness
Instructions
1. Prepare the Spinach
If using fresh spinach, sauté until wilted, then squeeze out all liquid.
If using frozen spinach, thaw completely and squeeze very dry.
Moisture removal is important for crisp results.
2. Mix the Dough
In a large bowl combine the chopped spinach, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, melted butter, salt, and pepper.
Mix until the mixture holds together when pressed.
If it feels too loose, add more breadcrumbs 1 tablespoon at a time.
3. Shape
Roll the mixture into small balls, about 1 inch each.
Place them on a baking sheet lined with parchment paper.
4. Bake
Bake at 375°F (190°C) for 20–25 minutes or until golden brown and crispy on the outside.
Let cool slightly before serving.
