Crispy Chorizo and Potato Tortilla
A delicious and quick tortilla pizza topped with crispy chorizo, potatoes, salsa, and melted cheese!
Ingredients:
1 tablespoon oil
1/2 pound potatoes, diced or sliced (225 grams)
1/2 pound fresh Mexican style chorizo sausage, casing removed (225 grams)
1 small onion, diced
4 tortillas (10 inch, corn for gluten-free)
1 cup salsa (240 ml)
2 cups shredded cheese (cheddar, Monterey jack, or mozzarella) (200 grams)
1 jalapeno, sliced
2 tablespoons cilantro, chopped (optional)
Directions:
Prepare Chorizo and Potatoes:
Heat the oil in a cast iron skillet over medium-high heat.
Add the potatoes and cook until lightly golden brown on all sides.
Add the chorizo and onion, cooking until the chorizo is done. Set aside.
Assemble Tortilla Pizza:
Wipe out the skillet and heat 1 teaspoon of oil.
Remove from heat and add a tortilla.
Spread 1/4 cup of salsa over the tortilla.
Top with the chorizo and potato mixture, shredded cheese, and sliced jalapeno.
Cook:
Place the skillet under the broiler in the oven.
Broil until the cheese has melted, about 2-4 minutes.
Serve:
Optionally, top with fried eggs, avocado, guacamole, pico de gallo, or other favorite taco toppings.
Garnish with chopped cilantro if desired.
