Crispy Chicken Parm Tacos with Garlic Ranch Sauce
Ingredients:
For the Crispy Chicken:
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs (preferably Panko)
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
Salt and pepper, to taste
Olive oil, for frying
For the Garlic Ranch Sauce:
1/2 cup ranch dressing
2 tbsp mayonnaise
1 tsp garlic powder
1 tsp dried parsley
1/2 tsp lemon juice
Salt and pepper, to taste
For the Tacos:
Soft flour or corn tortillas (8-10 small tortillas)
1/2 cup marinara sauce or pizza sauce
1 cup shredded mozzarella cheese
Fresh basil or parsley, for garnish
Optional: Sliced cherry tomatoes or arugula for topping
Instructions:
Prepare the Chicken:
In one bowl, combine flour, garlic powder, onion powder, oregano, salt, and pepper.
In a second bowl, whisk the eggs.
In a third bowl, mix the breadcrumbs with the Parmesan cheese.
Dredge each chicken tender in the flour mixture, dip it in the egg, and then coat it in the breadcrumb-Parmesan mixture.
Heat olive oil in a skillet over medium heat. Cook the chicken tenders for 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and set aside to drain on paper towels.
Make the Garlic Ranch Sauce:
In a small bowl, whisk together the ranch dressing, mayonnaise, garlic powder, parsley, lemon juice, salt, and pepper. Adjust seasoning to taste. Set aside.
